Difference Between Chives And Scallions
So here is the typical scallion. You have the white end, the kind of light-green part, and then this thicker, almost plastic-straw-like green on the end, which is tubular and should be firm.
The chive, similar, except for smaller. So the chive, this one, it actually has flowers. But the chive does not have actually any white part or bulblike part. The chive actually, its bulb is so insignificant that it’s always just chopped off. It’s actually never available in the produce aisle.
The greens are also significantly smaller. They are like really tiny, still sort of tubular, still very firm, but significantly different.

So one of the main botanical differences between both the scallion and the chive is that with a scallion, you have this white part here and the roots (see the picture above). This cultivar has actually been primed to never produce a bulb. So it never actually makes a full bulb, even though it is derivative from the onion family.
You have this white part, the roots on the end, this lighter green part, and then the tubular part on the end part. With chives, you don’t have the bulb at all. The bulb is insignificant. So it’s always just chopped off. It’s never actually sold. There is no culinary use for the bulb in chives. And you have a much smaller tubular thing.
The green onion, or the scallion, this is called an Allium fistulosum, if you want to get into the Latin part of it. And chives, these here with the smaller, skinnier ones with the flowers, are the Allium schoenoprasum. So that is the Latin name for that one. So they are completely different species.
Main Difference Between Chives and Scallions/Onions
The chive is actually the only herb in the onion family. It is actually also derivative of the onion, just like the green onions/scallions, but it’s actually an herb. The green onion, or the scallion, also derivative, is a cultivar, like I said, that has been primed to never, ever produce a bulb. So that’s the main difference between the two. So what does that mean when it comes to actually using them in recipes?
Well, the scallion, it depends on what you’re making. So you can do a really fine cut on the scallion and chop it into like one-eighth inch pieces, whether you are chopping up the greens or the whites, whatever part it is, and it’s a really great garnish.
However, if you wanted to use it in stir fries, you want to do a thicker cut, so cutting it about an inch long versus that one-eighth inch. So you can actually cook with scallions or you can use them as a garnish. Chives, however, you don’t want to cook with. They are just too delicate to really, really cook with.
They should really just be used as a garnish. So chives are really great in things like salads or pancakes or on top of eggs, whereas green onions, because you can cook them, they’re wonderful in soups or noodle dishes or stir fries. So that is the main culinary difference between the two.
Now, if you accidentally interchange them, there is nothing bad that is going to happen. It is just the chives, like I said, you don’t really want to cook them. They will wilt fast. It will not be pleasant. Green onions are heartier and made for cooking. So that is the difference between green onions and chives.
